Chilled Avocado & Celery Soup
This is one of the easiest soup to make going around; try it today. Serve it
chilled, with a glass of our delicious Rascal Pinot
Grigio, it's perfect for this time of year.
2 cups cold vegetable stock
2 cups celery pieces
2 ripe Avocados
juice of 1/2 lemon
2 tablespoons Italian tomato sauce
1 cup Greek-style yogurt
4 drops of hot pepper sauce
salt
4 tablespoons snipped chives
freshly ground black pepper and sea salt
Wash and prepare celery. Peel avocado and cut into pieces.
In a food processor, blend celery, avocado, lemon juice, tomato sauce, yogurt, soaked bread, pepper sauce and salt to a smooth consistency. If necessary, add a little water to obtain a creamy soup texture.
Chill soup and serve with chives.
A garnish of fresh prawns or cold chicken also works really well.
When it comes to wine matching, avocado has a reputation as being
difficult. This dish would be great with zesty white like Verdelho, N/V
sparkling wine or Pinot Grigio or Pinot Gris

with the fruit's high oil content. We like to pair avos with light, fruity
reds such as Beaujolais and Pinot Noir.
