Chalk Hill 'The Procrastinator' Cabernet Franc 2009
Chalk Hill is a family owned wine company dedicated to making small batch, hand crafted wines of distinction with fruit sourced from their six vineyards located in McLaren Vale, South Australia.
The Chalk Hill Procrastinator is 100% Cabernet Franc. Cabernet Franc is a
perfumed and aromatic red variety, typically fruit-driven and softer and
more subdued than its relative, Cabernet Sauvignon. It is a variety
commonly used for blending, but can also shine on its own given the right
conditions.
The 2009 Procrastinator possesses a wonderful perfume, with a burst of
fruit on the front palate and a fine tannic structure. It is crimson red in
colour with aromatics of raspberry, strawberry, violet, spice and
confectionary characters. The palate is of medium weight with bright fruit
and some undergrowth notes showing. This wine can cellar for ten years or
more. Pair it to a middle eastern lamb and cous cous dish.
